Hudson & Halls Live! Roast Dinner

Introducing Mark Southon, the Exective Chef at O'Connell Street Bistro and the mastermind behind Q's Roast Dinner Special for Hudson & Halls Live!

You may also recognise Mark as the resident chef on The Café on TV3, every weekday morning. We're stoked that Mark agreed to design our special Hudson & Halls Live! menu for our Lead Chef Vinay Bhatt and his team at Citizen Q to whip up.

We asked Mark to share what goes into making a good roast, his best roast memories and his inspiration for this menu...  

"Being from the UK I love roasts, there is a lot of variety and different takes on roasts to keep it exciting but a good roast must have 4 fundamental key parts,

1 - A good cut of meat that you can roast/slow cook to maximise flavour - rump, pork belly, lamb leg
2 - Crispy roast potatoes - I like to cook in duck fat for extra flavour 
3 - Great selection of vegetables prepared in different ways to complement the meat 
4 - Something interesting on the plate - yorkshire pudding, ox tail gravy, mint sauce 

My best memory of a roast is that it is associated with a nostalgic feeling of relaxed Sundays, spending time with family and good times. Q gave me the rundown of Hudson & Halls as to who they were and what they cooked. I was lucky enough to cook with them (actors Todd Emerson and Chris Parker) on The Café so I have a good feeling as what the dish had to incorporate.

So from their french cooking style comes the addition of hollandaise to the plate and they like cooking large pieces of meat so I used the rump cap and they loved WINE so to finish the dish it had to be a Red WINE Jus. This is a great offer and quality night out, so come to the Q Theatre and enjoy fantastic food and be entertained by the chefs/cooks behind the kitchen and then on stage.

I personally can't wait to see the carnage on stage."

THE MENU 

Roast beef rump cap served with roast baby carrots, duck fat potatoes, mini Yorkshire pudding and Dijon hollandaise sauce, brussel sprouts and a red wine jus.

Followed by a decadent sticky date pudding served with caramel sauce and Kapiti vanilla ice-cream.

Plus a tasty tipple of your choice from our Square Mile wine or Monteith’s range.
