Elva's sticky date pudding

Butterscotch sauce and hokey-pokey ice cream accompanies the delicious date pudding created by Q's baking goddess Elva! 

Her joy for cooking shines through in this dish which features on the current Citizen Q menu. Try her recipe for yourself at home or you could come into Citizen Q and have her make it for you herself.

(Don't even get us started on her banoffee pie!)

Elva's Sticky date pudding


300g dates
375ml orange juice
1 1/2 tsp baking powder
125g butter
220g brown sugar
Zest of 1 orange
3 eggs
190g self raising flour
50ml brandy
2 tsp mixed spices
1 pinch of salt


Pre-heat your oven to 180 degree celcius.

Bring the juices, dates and baking soda to boil in a pot. Simmer until the juice is reduced and the dates soft.

Place the mixture into a large bowl. Add the sugar, butter, orange zest, brandy, mixed spices and salt.

Mix well and leave the mixture to cool for at least 5 minutes.

Add the eggs to the mixture followed by the flour and mix the batter until well combined.

Pour into a baking pan and bake for 30 minutes.
